Een van onze vaste witte huiswijnen op basis van Chardonnay en …… Mauzac want afkomstig uit de Limoux-streek ten zuiden van Carcassonne. Fris, wit fruit; zorgvuldig gemaakt, nagenoeg Biologisch.
Grote Hamersma 2016: Wereldreiziger Chardonnay en plaatselijke coryfee mauzac kunnen het uitstekend met elkaar vinden. Geurige abrikoos, pico perzik, blobje romigheid, kekke kruiderij en een zest limoen.

Domaine Antugnac

In 1997, a decade after the birth of the Domaine des Deux Roches, the Collovrays and the Terriers began a new adventure by purchasing the Château d’Antugnac in the Aude region, about 50 kilometers south of Carcassonne.
At the time of its purchase by the Collovray & Terrier families, the Antugnac Domain operated 45 hectares. It now has around 95 hectares planted in red and white, in almost equal proportions. Most vineyards were replanted by the Collovrays & the Terriers with vines produced in the Mâconnais.The planting density was increased to promote a deeper rooting of the vines and the control of the yields. They range between 30 and 45 hectoliters per hectare, an average well below the naming decrees (50 hl / ha for the white Limoux, 48 hl / ha for the red Limoux). In terms of grape varieties, Chardonnay, Sauvignon and Mauzac dominate for the white wines while the Pinot, Merlot, Cabernet Franc and Syrah rule the kingdom of the red wines.
All the replanted vines are taken care of with the Guyot technique, the Limoux goblet technique is reserved to old Mauzac planted vines. The vines are grassed over and frequently plowed. The use of herbicides is greatly reduced. As for phytosanitory products, they are used sparingly. The vines are besides not prone to diseases due to the warm climate moderated by the mountains which are present in the Haute-Valley de l’Aude as well as the ventilation provided by the Tramontane.
The grapes are mechanically harvested for a part of the domain. For the AOC Limoux – red and white – the harvest is manual. This is also the case for the majority of Pinot, which helps to maintain the integrity of the delicate berries of this grape variety.
For the red wines, the grapes are destemmed. The harvests and cold pre-fermentating macerations take place in the morning to enjoy the night coolness. The castle Antugnac has a battery of thermoregulated stainless steel vats of 80 hectoliters that can vinify wines, grape variety per grape varitey, terroir per terroir. The fermentations vary from 7 to 21 days depending on the wine. The pigeages (operations consisting in thrusting the skin layers of the berries in the fermenting juice to extract color, tannins and aromas) are soft and daily operated. Emptying the vats are made by gravity, through stainless steel tanks. The maturation is then carried out in vats or barrels, according to the names and vintages.
For the white wines, the grapes are slowly pressed, the must is racked (cleared) then put into vats or barrels according to the plots. Alcoholic fermentations last between 15 and 21 days and vinification temperatures are monitored. They are usually followed by a malolactic fermentation (second fermentation during which malic acid degrades into lactic acid and tends to reduce the acidity of the wines). Maturation continues in vats sur lie or in barrels. In both cases, finings (resuspension of the lees – dead yeast and grape residues – to develop the complex flavors) are made, the frequency varies depending on the vintage year and the vintage itself.
Rosé wines are made with a direct pressing. They are vinified in the same way as the whites but are only matured in vats.
